An evergreen herb, thyme is very flavorful, despite it's small delicate looking gray-green leaves. It maintains it's flavor well even when dried. It matches well with most meats and veggies.
Storage: keep dry in a plastic bag in the fridge for up to a week. Or, put the stems in a jar of water and keep in the fridge for a couple weeks. Remove wilted, discolored leaves/stems as they appear.
Preparation: Rinse under running water. Pat dry. Remove the leaves from the woody stem.
