Asparagus is a perennial spring vegetable; look for it from the end of April through the start of June. The spears are generally bright green, but we also grow some purple asparagus too. white asparagus does exist, but it's a lot of work and you get very little nutritional value out of it, so we don't bother.
Storage: The best way to store asparagus is to store it upright in a container (such as a jar) that has 1" of water in the fridge. If you don't trust yourself to not spill the container (like me), then keep the asparagus in a bag.
Preparation: Cut 1-2" off the bottom of each stalk. Rinse well. Asparagus can be eaten raw, steamed, roasted, etc.
