Garlic scapes are the above-ground green stems that form as the garlic grows below ground. It is
frequently removed so that the plant dedicates nutrients to the garlic bulb and not to making flowers and seeds. Garlic scapes still impart a garlic flavor but are more mild and sweet. Generally, you can substitute garlic scapes for garlic cloves.
Storage: Keep in a plastic bag in the fridge for up to a week.
Preparation: Rinse and dry. Grill whole, chop and add to meals, etc.
