Peas - Shelling

English Peas are designed for shelling - the pods are not tough and not generally eaten. They are amazing eaten right after shelling, but you are welcome to cook them too. Choose dark green pods that are  plump, full, and smooth. Their main season is Spring through Early Summer, but peas can be grown in any cool weather.


Storage: Keep in the pod in a bag in the fridge for up to a week, although you'll get the best flavor when used within 3 days.

Preparation: Shell by opening along the seam. Eat as-is or steam, add to soups, stir-fries, casseroles, puree, and more. Save and freeze the shells to add to soup stock.
