Scallions - also called green onions - are young bulb-less onions. The green parts are typically used for garnish or added to the dish in the last few minutes of cooking, but the whites are edible too.
Storage: Keep in an unsealed plastic bag in the fridge for up to a week. The white parts will keep longer.
Preparation: Remove any roots that are still attached. Rinse well. Generally recipes call for the green or white parts sliced.
