Kale

Green kale has very curly leaves; they tend to
 be a bit lighter than the Tuscan Kale.
Kale is a leafy green with thick leaves that will not cook down as much as spinach does. It is slightly more bitter than swiss chard. Like other members of the brassica family, kale is full of vitamins and minerals, including Vitamins K & C, beta carotene, and calcium. It is a very hardy green that can grow year-round in our area.

Storage: Store in a plastic bag in the fridge for a few days. Do not wash until you are ready to use. 

Preparation: Wash thoroughly; the curlier it is, the more crannies for dirt to hide in. Kale can be eaten raw, juiced, included in smoothies, added to soups, steamed,
and more.
Red Russian kale has highly serrated
