Eggplants are a member of the nightshade family, along with tomatoes and potatoes, and can therefore sometimes be problematic for people with arthritis. The large dark purple eggplant - Italian Eggplant - is the most common, but we grow a wide variety from long and skinny to short and stripy.
Storage: Keep dry in a plastic bag in the fridge for up to a week.
Preparation: The little and skinny eggplant varieties have tender skins, so no need to peel. You may want to peel the large Italian ones.
