I think we all know what carrots look like: long orange sticks (yes, there are other colors but, they don't grow as well for us so you will mostly get orange). But did you know, if you eat a ton of carrots on a regular basis, your skin will get an orange tint? That's from all the beta-carotene (the good-for-your-eyes part) in the carrots.
Storage: Remove the tops and store each separately in a plastic bag in your fridge. Use the tops within a week; the carrots themselves will keep for up to a month.
Preparation: Scrub to remove any dirt and loose roots. Trip top and bottom if necessary. And enjoy!
