Chives

Chives are the smallest of the onion family. Unlike their counterparts, no bulb forms with chives, so it's just the leaves that you eat. We grow traditional round chives and flat chives (honestly, the flat chives look like grass); you will occasionally also get some chives flowers to use. Chives will grow year-round with the appropriate winter protection.

Storage: Keep in a plastic bag in the refrigerator for up to a week. They are still usable when wilted, but you will get the best flavor and texture from nice firm chives.

Preparation: Rinse and chop. Usually chives are used as a garnish or added the last couple minutes of cooking.
