Kohlrabi

Kohlrabi is part of the cabbage, broccoli, and kale family. It has turnip-ish looking bulb with spokes of leaves coming out. There are "white" (light green) and purple varieties. Kohlrabi has a mild, sweet flavor; you can also use the leaves like kale.

Storage: Use the leaves within a couple days. Store the bulb in a plastic bag in the fridge for up to a month.

Preparation: Leaves can be used like kale - eat raw, saute, etc. Peel the bulb to remove the thick skin. Dice, julienne, chop, etc and eat raw, saute, stir-fry, roast, or add to soup, and more!.
