Cucumbers


Cucumbers are in the same family as melons (which is why an unripe watermelon tastes like a cucumber). You'll see slicing cucumbers, kirbys (pickling), and persian cucumbers June through November, give or take Mother Nature's whims.
Slicing cucumbers are smooth skinned and dark green.
Kirby cucumbers are traditionally used for pickling but can be used in place of the slicing cucumber. They are short and bumpy.
Persians are the most common burpless cucumber (more mild taste and easier to digest). They are about 4-6 inches long, have thin skin and small seeds.

Storage: keep in a plastic bag in the fridge for up to a week.

Preparation: wash and slice and enjoy!
